Circa 1949, smoke regularly rose from Big Willie Noble’s property in Sanford, Florida. Willie was a pitmaster and a pillar of the community. During a time of segregation and deep racial division, Willie was known for bringing people together. Folks from every background came through: Black and white, rich and poor, locals and passersby. If you showed up hungry, Big Willie fed you. People would line up for two or three hours, and while they waited on their ribs, time passed easy. People fellowshipped, played games, told stories, and cracked jokes. It was a good time. Standing there at the pit, young Damien saw firsthand that barbecue wasn’t just about the food it was also about the people.
It was there, around the pit, that Willie began teaching Damien Noble (his grandson) the craft of barbecue when he was just eleven years old. Damien learned by watching, listening, and working beside him, often tending the pit while his grandfather and his friends swapped stories. Those long days and nights around the fire laid the foundation for a tradition built on patience, respect, and craftmansip.
